Strawberry Cheesecake Sandwich
In this article, we will explain a recipe and how to make a Strawberry Crispy Cheesecake, which is an easy-to-make and delicious cake.
⦁ 21 white chocolate chip cookies
⦁ 75g of melted butter
⦁ 480g of strawberry jam
⦁ 1 tsp. agar-agar powder
⦁ 350g of white chocolate
⦁ 360g of cream cheese
⦁ 350g of liquid cream
⦁ 14 to 16 small strawberries
⦁ 55g of melted butter
Blend the 12 white chocolate chip cookies in a blender and add the melted butter. Place this preparation in a springform pan lined with greaseproof paper. Press to form a very compact base.
Put half of the jam in a small saucepan with 4 tablespoons of water. Add half of the agar-agar and leave to cook for 5 minutes, stirring constantly.
Pour the jam over the cookie base and spread evenly, then leave to cool while preparing the filling.
Melt the white chocolate in a water bath, once the chocolate has melted, allow cooling to almost room temperature.
In a bowl, whip the liquid cream into whipped cream, in another bowl, whip the cream cheese until soft, then add the melted chocolate and mix well with a whisk. Stir in the whipped cream little by little. Pour the mixture over the strawberry jam and add fresh strawberries. Press the strawberries into the cream. Place the cake in the refrigerator for 4 hours or overnight.
Gently reheat the rest of the jam and add the remaining agar-agar powder. Stir for 5 minutes, then remove from the heat and allow to cool.
Place the jam on the cheesecake and spread evenly. Place the remaining cookies in a blender and add the melted butter. Spread the mixture over the top of the cheesecake and spread with a spoon. Let cool for one hour in the refrigerator, then run a hot knife around the edge of the cheesecake to help unmould it. Carefully transfer to a serving plate, then cut into slices to serve.
